Dietitian Andy De Santis tells me, “The nicoise salad shares the benefits of the Greek salad when it comes to the olive oil and tomato component, but also brings the added benefit of containing both fish and eggs, which are great sources of protein (which will help keep you feeling full and satisfied) and two of the richest natural sources of vitamin D (which most people struggle to get enough of in their diets).
