Cooking cold lamb in a hot oven often leads to uneven cooking and lengthier cooking times. Before you roast your beautiful leg of lamb, take it out of the fridge and be sure to give it enough time to come fully to room temp. While this may seem like one of those nitpicky points that can be skipped, it really does make a great deal of difference to ensure efficient and even cooking.
