This trend has been working for some time and it definitely won’t leave any time soon. This traditional method of preserving food, called fermenting, is the answer to all of our questions.

It’s the best way to reduce kitchen waste, it increases our consumption of functional foods, and it’s our best ally in the struggle to eat healthy. There are already a lot of fermented foods that we eat and drink (don’t forget about the classic cheese and wine), so why not expand our culinary choices and add some more?

For example, the probiotics (the first to be mentioned in this article) are good to our digestion and assure us the correct amount of good bacteria in the gut. Food like yogurt, miso(fermented soy bean paste), fermented sweet black tea kombucha or sauerkraut, you name it!
